"SLIGHTLY TOASTED" WE GIVE IT THUMBS UP!!!

Karch my partner in trying "New to us" places to eat in Las cruces, NM.   We have lived here a year now!! wow.. We decided we should post about our eating adventures on the BLOG.  We will try and include a picture of the food we try.  I love to eat and try new places. So I often ask random people I meet where they like to go. Most of the time I like to make a list off the place people in the cities vote on for the "best of the area". So if I ask someone their favorite place and Its not on my list I quickly add it. My list keeps growing!! I was told about a little place accross from the las cruces high school called "Slightly toasted". We decided it was a good day to try it and headed out. We found it easily  accross from the highschool where is was said to be. always a good sign. We then went in and found a small but nice little dining room with about 4 tables. They had a great little selection with fantastic prices. I tried the Green chile burger and karch the bacon burger. Granted we got them without the buns this time and we were pleased. Mine had great flavor with lots of yummy green chiles and a side salad. Karch's was great flavor with nice thick bacon. We gave this little place a huge thumbs up great food and great prices!!

CHILE RELLENO'S

WOW, I have wanted to make chile relleno's. I just cant find them here that I love. I like the ones in colorado at on the border. Nice crisp chiles, not mushy. They have a great crisp coating and oooey gooey cheese. Well I finally did it, and was surprised just how easy it was. I tried a recipe that had you whip the egg whites and then fold in just a tiny bit of flour and some whiped egg yolks. It was great fluffy batter. I roasted the chiles on the gas top stove and peeled them.  I Stuffed mine with cut up slices of monterey jack. I know there are different cheeses to stuff with so thought I would try this one first.  Then I dipped the chile in plain flour and then dipped it in the batter. It was fast easy and off to be cooked. I had some picante sauce that I used instead of making my own sauce. Next time I will try a sauce.

ORGANIZING MY CLOSET

I'm sure most of you have a organizing plan for your closet. I need to organize a little bit better and yes I did buy 99% of this at the thrift store, platos or garage sales.  I love that you can reuse something someone else has deemed not worthy of keeping for some reason. The clothes I get rid of just dont fit anymore, I dont like the fit etc. I find that sometimes you think something is great you get it home and find the button comes undone, the fit is crooked, the pockets stick out.  I still have work to be done on this..

Making Tamales

The greatest thing about living somewhere new is learning how to do something new!! So to make the most of being in Las Cruces, New Mexico I decided I need to learn some local cooking skills. I decided to provide my own teacher and find a couple of classmates to learn with.  So after getting Sister Bybee and Sister Young rounded up to learn with, I asked Sister Delplane to teach us how to make TAMALES.  I went with her to buy the groceries on monday and we made them on wednesday. Let me tell you I learned new things just from shopping with her.
Here are the pictures of us making them!!

How I REMAKE a skirt

After losing weight... I have given away several different wardrobes worth of clothes. Some I just have loved. I finally came to my senses and thought wait a minute Maybe I can save some of these. So I Came up with a cheaters way of downsizing my skirts. I wish I would of thought of this alot sooner.. Saving me favorite skirts, and money. 1- Cut off the top waist band and sides to the size you want the skirt. I make them all have elastic to make it fast and easy.
2- Measure a piece of elastic the size of your waist and then take off a couple of inches. You will still end up with more elastic than you need but it works. Put in right on the unfinished edge and stretch and sew around the edge with a zig zag stitch... This wont show once you are done.
3- When you come to the end overlap just about a 1". Remeber this is a cheaters way so if its a little more or a little less than dont stress... (be happy)...

4- This is the last step fold over and sew on the bottom edge with a straight stitch. WARNING if you are a perfectionist Im sure you just gasped, This may not be the method for you!!! But for me who loves to shop thrift stores and likes to have lots of choices to wear this is perfect
